Mexican cuisine can be incredibly fresh and delicious. Unfortunately, nightshade-based ingredients like tomato, tomatillos, and all kinds of chilli are core ingredients in traditional Mexican cooking.
Fortunately, with a bit of inspiration Mexican food can still be on your menu. This salsa is just one example. It uses peaches to replace the sweetness and crunch of tomato, although you could use other stonefruit like nectarines as well. It pairs especially well with chicken, pork and seafood dishes.
It's important to carefully balance the salt and acidity in this dish, especially if the peaches are particularly sweet. Be sure to taste as you go, and add more salt or lime juice
Ingredients:
2 ripe peaches or nectarines, diced
1/2 red onion, finely chopped
1/4 cup fresh cilantro, chopped
2 tablespoons lime juice
Salt and pepper, to taste
Method:
In a medium bowl, combine the diced peaches or nectarines, finely chopped red onion, chopped cilantro, lime juice, salt, and pepper. Taste and adjust the lime juice, salt and pepper.
Mix well to combine all the ingredients.
Cover and refrigerate for at least 30 minutes to allow the flavours to meld.
